Coconut porridge – breakfast recipe

Fancy a change from your usual breakfast? Try this tasty, tropical porridge to set you up for the day! Not only full of flavour, it is packed with lots of nourishment as well as being appealing to the eye.

Oats are a great source of slow releasing carbohydrates to help balance blood sugar and to keep you going. By soaking overnight, the porridge is deliciously creamy and quicker to cook. Coconut butter contains medium chain triglycerides (MCTs) which are processed by the body in different way to other fats - they help you stay fuller for longer and may aid weight management.

A nut butter, like walnut butter, is full of healthy omega 3 fats which help brain and heart health. Add a handful of nuts for protein and antioxidant-rich berries or tropical fruit to add a burst of colour and flavour, keep bags of frozen ones in the freezer, especially during winter.

 

INGREDIENTS

Serves 1

40g oats

200ml water

3 tbsp of coconut milk

1 ripe banana, sliced

1 tbsp Omega Excellence Organic Raw Walnut Butter

1 tbsp Omega Excellence Organic Virgin Coconut Butter

A handful of chopped nuts

A handful of fresh or frozen berries or tropical fruit

METHOD

Soak the oats overnight in water*. In the morning, add the coconut milk and half the sliced banana and gently heat through for 2 minutes until it is hot. Add the nut butter and coconut oil and heat until melted.

Tip into a bowl, add the remaining slices of banana, nuts and top with your favourite fruit.

*alternatively, start from scratch in the morning and gently simmer the porridge in the water for 5 -10 minutes until the water is absorbed.
